Easy Seafood Paella

Craving for some paella? I always use this recipe for any paella I make. I just change the seafood to hungarian or italian sausages for a meat paella. It always turns out superb!


Easy Seafood Paella

Ingredients
  • 1 piece medium onion
  • 2 tsps olive oil
  • 1 tsp turmeric
  • 1/2 tsp salt
  • 1/4 tsp crushed red pepper
  • 3 cloves minced garlic
  • 14 ounces water
  • 14 ounces diced tomatoes
  • 1 cup frozen peas
  • 5 pieces medium prawns
  • 3 pieces medium length squid, sliced into rings
  • 1 large piece of any meaty fish(I used swordfish), cut into chunks
  • 1 cup long grain rice
Cooking Directions
  1. Saute onions and garlic.
  2. Add turmeric, salt, and red pepper. Cook for a few seconds.
  3. Add water, diced tomatoes and frozen peas.
  4. Increase heat to high. Cover and bring to a boil.
  5. Stir in the seafood and the rice.
  6. Cook until rice is soft and water has been absorbed (by the rice).
  7. Remember to stir every now and then to avoid burning the rice.

Easy Nutella Brownies

Easy as pie...I mean, as brownies! I have been seeing this brownie all over the net, so today, I tried it. I added though some toffee bits on top and some chocolate chips. It turned out superb! My husband and I ate it with slices of banana and a scoop of vanilla ice cream!


Easy Nutella Brownies

Ingredients
  • 1 cup Nutella chocolate spread
  • 2 medium eggs
  • 10 tbsps flour
  • 1/2 cup chocolate chips (optional)
  • 1/4cup Heath Toffee bits (optional)
Baking Directions
  1. Preheat the oven to 350F.
  2. Line 6-cup muffin pan with cupcake covers.
  3. In a bowl, thin out the nutella spread with the 2 eggs.
  4. Add the flour and 1/4 cup chocolate chips. Don't overmix.
  5. Spoon the batter into the muffin pan.
  6. Sprinkle some toffee bits and choco chips on top.
  7. Bake for 10 to 12 minutes.

Pecan Pie

Just finished the last piece of this delicious Pecan Pie. This recipe was sent to me by my sister-in-law and it is so easy to follow. The only thing I changed is the dark brown sugar. I used coconut sugar instead for health reasons.

Pecan Pie

Ingredients
  • 1 cup light corn syrup
  • 1 cup coconut sugar
  • 3 pieces eggs, slightly beaten
  • 1/2 cup butter, melted
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 cup pecan halves
  • 1 piece 9-inch unbaked pie crust
Cooking Directions
  1. Heat oven to 350 F.
  2. Combine corn syrup,sugar,eggs,butter,salt and vanilla. Pour mixture into the unbaked crust.
  3. Arrange the pecan halves on top.
  4. Bake at 350 F for 45 minutes or until center is set.
