Mango Tapioca Pudding

Tapioca dessert is a staple in my home! We usually eat this plain but this time, I added some mashed mango and it turned out superb! This is so simple to make!  If you want a firm pudding, just add mango slices on top of the pudding before serving. For this recipe, I mashed the mango meat with a fork and added it to the pudding after cooking it.I found out that, adding the mashed mango to the pudding makes it more liquid-y( but tastes more heaven-ly!!)

What you need:
  • 1/2 cup mango meat,mashed
  • 2 3/4 cups milk( I used a combination of  2% milk and 1 cup evaporated milk for a richer taste!)
  • 1/3 cup sugar
  • 3 tbsps Minute tapioca
  • 1 egg beaten
  • 1 tsp vanilla
The flavour from this bottle is to die-for!!!
 How to to make it:
1. Mix milk,sugar, tapioca and egg. Let stand for 5 minutes.
2. Cook mixture on medium heat until it boils. Stir constantly. Remove from heat. Stir in vanilla and mashed mango.

3. Cool for 30 minutes and stir.I like mine cold, so I put it in the ref before serving.
4. Garnish pudding with slices of mango.

Chix and Veg Stir-Fry

Loved this one-dish meal! I was craving for vegies so I thought of making this ! The ginger really brought out the taste of all the ingredients!


What You Need:
  • 3 pcs chicken fillet, cubed
  • 1 tbsp ginger, julienned
  • 1 tsp garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 2 tsp soy sauce
  • 3 cloves garlic, sliced
  • 1 medium onion, sliced
  • 1 tbsp ginger, julienned
  • 1/2 medium cabbage, shredded
  • 1 carrot, julienned
  • 1 red bell pepper, julienned
  • 2 cups mongo sprouts
  • 1 tsp garlic powder
  • 4 tbsp oyster sauce

How to do it:
For the chicken:
1. Mix cubed chicken, ginger , red pepper flakes (optional) and garlic.
2. Add soy sauce, then mix. Marinate for 5 minutes.
3. Stir fry until done. Set aside.
For the vegetables:
1. Saute onion and ginger until fragrant. Add julienned garlic.
2. Add cabbage and carrots. Cook for 3 minutes. Add 3 tsbps water only if the mixture is too dry.
3. Add mongo sprouts and red bell pepper. Cook until done.
4. Add oyster sauce and 1 tsp garlic powder.
5. Cook for additional 1 minute.

Top the cubed chicken on the vegies and enjoy!!

Potato Omelette Dish

Great as appetizer!
Ingredients
  • 2 large potatoes, sliced thinly
  • 1 medium onion, sliced 
  • 3 eggs,beaten with 3 T milk
  • 1/2 cup parmesan cheese
  • 2 T canola oil
  • 1 T butter to grease glass dish
  • salt and pepper to taste

Procedure 
1. Pre-heat oven 375 degrees.
2. Saute  onions in oil until fragrant. Set aside.
3. Grease the glass dish with butter.
4. Layer sauteed onions,potatoes and cheese.
5. Pour the egg mixture over the potatoes.
6. Top with more cheese.
7. Cook in the oven for at least 30 minutes or until egg is set and potatoes are transparent.

Easy Oriental Chicken


Easy Oriental Chicken
Ingredients
  • 3 pieces chicken breasts, cubed
  • 1 tablespoons olive oil
  • 1 tablesppon sesame oil
  • 1 garlic clove, crushed
  • 1/2 teaspoon fresh ginger, minced
  • 1 1/2 teaspoons red pepper flakes
  • 1/4 cup Jack Daniel's Whisky (or orange juice)
  • 3 tablespoons brown sugar
  • 2 tablespoons ketchup
  • 1 tablespoon balsamic vinegar
  • 1/2 cup water
  • 1/3 cup soy sauce

1. Heat olive oil and sesame oil in a skilllet.
2. Add cubed chicken and fry until brown. Set aside when done.
3. Add the rest of the ingredients. Mix well. Cook over medium heat.
4. Add chicken pieces and bring to a boil.
5. Reduce heat and simmer for 20 minutes.
6. Serve as toppings on hot rice!
