Apple Pie Crumble

The first thing I make sure I have whenever I make this,  is Vanilla Ice Cream - the undeniable most loved partner of Apple Pie! This is easy to make- no kneading of pie crust dough!
What You Need:
Vanilla Ice Cream
Pie Filling
  • 5 big apples, sliced thinly
  • 1/4 cup coconut sugar
  • 1/4 cup light brown sugar
  • 3 T All-Purpose Flour
  • 1 1/2 tsps cinnamon
  • a dash of salt

Pie Crust
  • 1 1/2 cups flour
  • 2 T coconut sugar
  • 1/2 tsp salt
  • 1/2 cup cold butter
  • 3 T cold milk, drizzled slowly on the flour mixture

Crumble Topping
  • 1/2 cup all-purpose flour
  • 1/2 cup instant oatmeal
  • 1/2 cup light brown sugar
  • 1/4 cup white sugar
  • 1/2 cup butter

How to do it:
  • Preheat oven to 350 F.
  • Prepare pie filling.
1. Peel and slice apples thinly.
2. Mix flour, sugar, cinnamon and salt. Toss apples and pie filling together.Set aside.
  •  Prepare pie crust.
1. Mix flour, sugar and salt. Cut in butter to flour mixture using a pastry blender.
2. Drizzle milk slowly and a little at a time, until you get a moist dough.
2. Press resulting mixture onto your pie dish forming a crust (I always use a deep-dish pie plate.)
3. Prick crust all-over with fork.
  • Transfer spiced apples into the pie crust. Set aside.
  • Prepare crumble topping. 
1. Combine sugar, flour, and oatmeal. Cut in butter into the flour mixture until you form pea-like crumble.
2. Sprinkle all over the apples to cover the whole top of the pie.
  • Bake for 1 hour.
Cool for about 30 minutes and serve with  vanilla ice cream!

Chicken 'N Noodles

The most loved dish in our home! Everyone is excited to eat whenever my husband makes this delicious chicken dish! My hubby got his recipe from his mom!
 What You Need:
  • 1 whole chicken, cut into pieces 
  • 3 quarts water  
  • Salt to taste
  • 2 eggs
  • 2 tablespoons of water
  • 1 teaspoon salt
  • 2 cups flour

How To Do it:
1.  Wash the chicken. Fill up the saucepan with 3 quarts water.
2.  Add salt. Boil chicken until meat comes off  from the bones.
3.  For the noodles: Beat eggs in a large bowl.  
4.  Add 2 tablespoons water.
5. Beat all together. 
6. Add flour and salt. Mix all together until a dough is formed.
7.  Sprinkle some flour on the table and roll out dough until very thin, approximately 1/8 of an inch.
    Leave dough to stand for 2 hours.
8. Cut dough into thin strips.
9.  Add noodle strips to the chicken. Cook for additional 15 minutes.

Cabbage Rolls

Great one-dish meal! We usually eat this with mashed potatoes or some pasta! But if you include rice in it, then, this is truly a one-dish affair!
What You Need:
  •  7-9 pcs big cabbage leaves
  • 1/2 kilo of ground beef
  • 1 medium onion, chopped
  • 1 tsp oregano
  • 1 pc egg
  • 1/2 cup raw rice (optional)
  • salt and pepper for seasoning 
  • 1 can crushed tomatoes (400 gms)
  • 1 can tomato sauce (240gms)
  • 1/4 cup water
  • 1 tsp brown sugar
  • toothpicks

How to do it:
1. Boil cabbage head until soft enough to peel. Separate around 7 to 9 pcs of leaves.
2. In a bowl, mix ground beef, onion, oregano and egg (and rice).  Form into balls. Season with salt and pepper.
3. Wrap balls with cabbage leaves and secure with toothpicks.
4.  Arrange cabbage rolls in a pan.
5. Pour crushed tomatoes and tomato sauce on top.
6. Add water and brown sugar.
7. Simmer for 50 minutes or until cooked.
