Strawberry Muffin with Walnut Crumble

I love making muffins for breakfast! I tried to make this one healthier without sacrificing taste!

What You Need:
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 teaspoon baking powder
  • 1/4 tsp salt
  • 6 T butter
  • 4 T apple sauce
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 egg white
  • 1/3 cup 2% milk
  • 1 T vinegar
  • 6 tsps canned strawberry pie filling
Crumble Topping :
  • 1/2 cup walnuts, chopped
  • 9 T flour
  • 6 T cold butter
  • 3 T white sugar
How To Do It:
1. Pre-heat oven to 350F. Grease a large size muffin pan (6 muffins)
2. Combine vinegar and 1/3 cup milk. Set aside.
3. Sift together the all-purpose flour, baking soda, baking powder and salt.
4. Beat the butter until creamy. Add the apple sauce continue beating.Gradually add sugar, then the egg and the egg white. Add the milk (the mixture will be lumpy) and continue beating.
5. Add the flour mixture and mix until everything is smooth and creamy.
6. Laddle the butter into the muffin pan.
7. Crumble topping: Mix all the ingredients in a bowl. Using a pastry blender, cut in the butter into the flour and sugar.
8. Put a tsp of strawberry filling on top of each muffin. Swish some of the liquid inside the batter using a knife. Take a handful of crumble topping and cover the top of each muffin.
9. Bake in the oven for 23 minutes or until done.
10. Cool for 5 minutes.

Mango Refrigerator Cake

Easy-no-bake dessert! Great midweek treat for my family! I used ladyfingers instead of graham crackers in this recipe-equally delicious! I also enjoyed this dessert with a tablespoon of nutella chocolate spread!
What you need:
  • 6 mango cheeks,sliced
  • 10 pcs ladyfingers
  • 1 tablespoon confectioner's sugar
  • 1 200-ml whipping cream

How to do it:
1. Cover a 9x9 inch glass dish with ladyfingers.
2. Whip the cream  with sugar and spread over the ladyfingers.
3. Arrange the mango slices on the cream layer.
4. Chill for at least an hour to set.

Almond-Lettuce-Tomato Salad with Raspberry Vinaigrette

I bought this Raspberry flavored wine vinegar in one of my grocery trips and came up with this salad to enjoy with it! I ate this with some delicious chicken nuggets!
What you need:
  • 3 cups of lettuce, roughly chopped
  • 3 small tomatoes,sliced
  • 1/4 cup sliced almonds 
  • parmesan cheese, enough to sprinkle on top of the salad

Raspberry Vinaigrette:
  • 2 oz Raspberry flavored wine vinegar
  • 4 oz olive oil
  • 3 tsp honey
  • 1 tsp dijon mustard
  • salt and pepper for seasoning


How to do it:
1. Mix all the vinaigrette ingredients in a glass bottle. Cool in the refrigerator
2. Layer the lettuce, tomatoes, and almonds. Pour over the vinaigrette and toss the salad.
3. Sprinkle some parmesan cheese on top of the salad.
